Oatmeal Apple Crisp


1 cup brown sugar, 1 cup rolled oats, 1 cup of flour, 1/2 cup, melted butter, 4 cups of peeled apples cored and chopped, 1/4 cup white sugar, 2 tsp cinnamon

Preheat oven to 350 degrees, lightly grease an 8 inch pan. In a bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of the crumb mixture in pan. Spread the apples evenly over the crumb mixture. Sprinkle with white sugar and cinnamon. Top with remaining crumb mixture.

Bake in the oven for 40-45 minutes, or until golden brown.

I honestly don't think there is anything finer in this world than oats, apples and brown sugar. It's such a wonderful combination.

Thanks for commenting on my blog posting about my college-bound daughter. Best of luck with your two! I really didn't think my oldest would fare as well as he has without me. He's navigating college life like a pro. I'm just hoping my somewhat scatter-brained daughter can figure things out. Good luck with the bed-making. Don't worry too much about it -- they don't make their beds in college so it's not a pre-req.
